The reason why the “portions of” rule does not apply here is because meat on its own would not constitute as a restaurant dish in its own right, and the same is true of cheeses; hence why Susie said in https://wiki.apterous.org/Episode_7272 that the S can’t be added to MUTTON, in https://wiki.apterous.org/Episode_7371 crowdies x was omitted, and meats and cheeses given as a [MASS NOUN] won’t take the -S plural on Apterous any more. VENISON is also uncountable according to https://www.oxfordlearnersdictionaries. ... ?q=venison.
So now we have a better interpretation of the “restaurant rule” which is largely based upon ordering a portion or unit of something. You can’t order venison on its own, or asiago on its own (plurals of cheeses that are mass nouns have been ruled explicitly invalid by the producer).

Does anyone have an up-to-date copy of the rules they could share?
What I've got is a real ragbag, with quite a few words that are count nouns or verbs (silk, steel, solder, clay, fluoride, soil etc.) and some I don't think you'd ever be allowed (ginghams?). Plurals of actions or processes such as LAMBINGS are allowed. So WATERINGS, which must have been available many times, must be OK?
Worth pointing out that the 'restaurant' aspect is only a minor one in those rules.

lambings x, curations x and sedations x are not allowed, and waterings x is not valid either. Oxford Dictionaries Online does not state any [COUNT NOUN] sense for these words, and WATERING isn’t a noun at all according to the Oxford dictionaries. An action would have to explicitly give a [COUNT NOUN] sense, and these are given for LEARNING and GENOCIDE so these plurals are fine. But they are not given for LAMBING, SEDATION nor CURATION.
I think this article https://wiki.apterous.org/Contestant_Guidelines is hugely outdated. Contestants are given dictionary guidelines after passing the audition so I’d like to see all of this replaced. Even so, Countdown can (unfortunately) not follow the rules, hence shoutier x was wrongly allowed https://wiki.apterous.org/Episode_7299.
